Tartines scrambled eggs with asparagus

I love asparagus,I enjoy the ones I buy at the Market of Eysines on Sunday morning, from a local producer. It is successful on the market, you have to get up early to have the chance to feast on its asparagus, whether it is white or green, more or less big.

For this recipe of scrambled egg tartines with asparagus,I took small greens, easier to taste than large ones on toast. The bacon/egg/asparagus mix is very simple but it works wonderfully!
It's a perfect recipe for brunch, an aperitif or a TV set in front of a good series. The three of us are a fan at home, especially when using a nice thick slice of cereal bread underneath that toasted on the surface remains soft to heart.

  • 6 thick slices of seed bread
  • 6 thin slices of artisan smoked bacon
  • 6 green asparagus
  • 5 eggs
  • 1 tablespoon heavy cream
  • Salt flower, pepper from the mill
  1. Rinse the asparagus, cut the base of the foot a little dry. Keep the tips, finely chop the stems. Sauté them for 2 minutes over high heat in a frying pan with a drizzle of olive oil. Season with salt and pepper and set aside.
  2. Meanwhile toast the slices of bread. Surround the asparagus tips with the smoked bacon, brown them in the frying pan, set aside.
  3. Whisk eggs in a bowl. Season with salt and pepper. Cook in the frying pan with a light drizzle of olive oil over low heat. Mix all the time of cooking, add the cream and stop cooking. Add the asparagus pieces and mix.
  4. Divide scrambled eggs over toast. Add the asparagus tips to the bacon and serve.
